FAMOUS SPICY BOÉ RIGATONI

 
Ingredients:
(Serves 4)
Onion Soubise
3 large brown onions, sliced
2 cloves of garlic, crushed
50ml water
100ml BOÉ Rosé
100g butter
Salt

Tomato Compote
2 x Can of diced Tomatoes 
Splash of passata cooking sauce
salt
Splash extra-virgin olive oil
Splash of heavy cream
chilli paste (to taste, depending on your desired heat)
200ml BOÉ Rosé
Rigatoni pasta

Method:

Onion Soubise:
Cook onions, garlic, water, BOÉ and butter over medium heat. Season with salt. Do not colour the onions.
Tomato Compote:
Combine the Tomato Compote in with the Onion Soubise. Cook all ingredients together until heated through. Taste and adjust seasoning to taste. Leave to simmer for at least 1 hour
Cook the rigatoni in boiling salted water for 2½ minutes.

To Serve
Add rigatoni to the pan, give it a good toss and check that you have the desired sauce consistency and taste.
